About one in five custom cake inquiries we get at Birdie's involves a dietary restriction — usually gluten-free, sometimes dairy-free, occasionally egg-free, and rarely all three at once. Here is the practical version of what we offer, what each substitution actually changes about the cake, and where we draw the line on cross-contamination.
Gluten-friendly cakes
We use a 1:1 gluten-free flour blend (currently King Arthur Measure for Measure, with xanthan gum already included) for gluten-friendly cakes. The texture is slightly denser than a wheat-flour cake — closer to pound cake than to the airier vanilla bean we typically bake — but the flavor is identical and most guests cannot distinguish a gluten-friendly Birdie's cake from the regular version in a blind taste test.
Gluten-friendly substitution adds $15–$25 per single-tier cake to cover the more expensive flour blend and the additional kitchen prep (we wipe down all surfaces, change pastry bags and tips, and use dedicated mixing bowls before starting a gluten-friendly bake).
We use the term "gluten-friendly" rather than "gluten-free" deliberately. Our kitchen handles wheat flour daily; we cannot guarantee a fully gluten-free environment for guests with celiac disease or severe wheat allergy. For those guests, we recommend a dedicated gluten-free bakery — there are several reputable options in the Fort Wayne area, and we will refer you to them if needed.
Dairy-free cakes
Dairy-free cakes use a high-quality plant-based butter (currently Miyoko's European-Style) and oat milk in place of dairy butter and whole milk. The butter substitution is the more sensitive one — plant butters have a slightly lower fat content than dairy butter, which means dairy-free crumb is a touch drier. We compensate by adding 2 tablespoons of neutral oil per layer.
For frosting, we use a dairy-free buttercream made with plant butter and powdered sugar. It is stable at room temperature for 4–6 hours and pipes cleanly. The flavor is subtly different — slightly less rich than dairy buttercream — but most guests find it indistinguishable.

Egg-free cakes
Egg-free cakes use a vinegar-and-baking-soda chemistry pairing rather than eggs for lift. The result is a tender, springy crumb that is very close to a traditional cake. We have made egg-free cakes for guests with severe egg allergy and for vegans who also wanted dairy-free buttercream.
Egg-free substitution adds $10–$20 per cake. A fully vegan cake (egg-free + dairy-free) adds $25–$40.
What we will not promise
For guests with severe allergies — especially celiac disease, severe nut allergy, or anaphylactic dairy allergy — we will tell you plainly that our kitchen handles wheat, dairy, eggs, peanuts, tree nuts, and soy daily. We do not have a separate allergen-free room. We can avoid those ingredients in your cake; we cannot guarantee the cake will not encounter trace amounts during baking, decoration, or boxing.
If your guest list includes someone whose health depends on a fully allergen-free environment, please tell us, and we will help you make an honest decision — sometimes that means a different bakery, sometimes that means a non-cake dessert from us, sometimes the conversation lands on "this works." There is no upside to surprises on the wedding day.
