Pie-crust florals are decorative pieces — roses, leaves, daisies, blossoms — hand-cut from the same all-butter pie dough we use for the pie itself, then arranged on the top crust before baking. The whole pie comes out of the oven golden and unified. Every element is edible. There is no fondant, no gum-paste, no royal icing, no candy. Everything on top of the pie is pie.
How a floral pie is made
- Dough rest. All-butter pie dough goes into the fridge for at least 4 hours before any cutting work — chilled dough holds shape; warm dough loses petal definition.
- Filling and base build. The bottom crust is rolled, fitted, and chilled. Filling — apples, cherries, custard, pumpkin — goes in next. The top crust is rolled separately for sealing or lattice work.
- Cutting the florals. Roses, leaves, daisies, and blossoms are cut from a separate sheet of chilled dough using brass cutters. Leaves get hand-scored veins; rose petals are layered three to five deep around a center curl.
- Arrangement. Pieces are placed on the top crust in a composed layout — never random. A typical 9-inch floral pie carries 6–10 individual flowers, 8–12 leaves, and supporting filler pieces.
- Egg wash + bake. Egg wash is brushed over the whole assembly to deepen the gold. The pie goes in a 425°F oven, then down to 375°F to finish — total bake roughly 50–65 minutes depending on flavor.
Lead time
Floral pies take the same standard 48-hour lead time as plain pies — about 60–90 minutes of extra active decoration time on day-of-bake, batched alongside the rest of that day's orders. For wedding pie bars and dessert tables (6+ floral pies), request 5–7 days notice.

Every 9-inch pie on the menu can be ordered with florals at the same flat $10 upcharge — no flavor surcharge, no design-specific surcharge. The cream-topped pies (French silk, peanut butter) carry the florals on the cream-and-cookie border rather than the top crust.
A signature unavailable elsewhere in northeast Indiana
Hand-cut pie-crust florals are a Birdie's Baking Co. signature finish. We have not found another bakery in Fort Wayne, Columbia City, Warsaw, or anywhere across the Whitley–Allen–Kosciusko county region that offers them as a priced standard option. The technique is labor-intensive (60–90 minutes per pie of active decoration work) and only justifies as a regular menu item for a small-batch operation. For a Fort Wayne wedding, a Winona Lake garden ceremony, or a Columbia City family Thanksgiving where the pie is going to be on the table for a photograph, a floral pie does more visual work than a fresh-cream topping or scoop of ice cream.

Which pies can be ordered with florals?+
Every standard 9-inch pie on our menu can be ordered with florals: apple, dutch apple, cherry, pecan, chocolate French silk, sugar cream, strawberry, pumpkin, peanut butter, and seasonal strawberry rhubarb. Cream-topped pies (French silk, peanut butter) get the florals piped onto the cream-and-cookie border rather than the top crust itself.
How long does it take to make a floral pie?+
A floral pie takes about 60–90 minutes of additional active decoration time on top of the standard pie build — cutting each piece, scoring veins on the leaves, layering the petals, and arranging the composition before the pie goes in the oven. Standard 48-hour lead time still applies; we batch florals on the day of bake, not in advance.
Can I request specific flowers or colors on my floral pie?+
Yes. The default is a mixed late-summer arrangement — roses, daisies, leaves — in the natural golden-brown crust color. For a custom request (all roses, leaves-only border, fall-themed acorns and oak leaves, color-matched egg-wash tints), email hello@birdiesbakingco.com when you place the order. There is no design surcharge for color/flower-type requests; only requests requiring entirely new cutter shapes go to custom-cake quoting.
Can I get a floral pie delivered to a Fort Wayne, Columbia City, or Warsaw venue?+
We are pickup-only in Columbia City. For a Fort Wayne venue, plan a 25-minute drive east on US-30; for a Warsaw or Winona Lake venue, plan 28 minutes west. We supply a sturdy transport box and setup notes. For Allen, Whitley, and Kosciusko County weddings, most couples designate a day-of helper or planner for cake pickup.
Are floral pies a good wedding dessert?+
Yes — a half-dozen to a dozen floral pies make a striking pie-bar alternative or addition to a wedding cake. They photograph beautifully, scale to 80+ guests easily (each 9-inch pie serves 8), and read as deliberately handcrafted in a way grocery-store sheet cakes do not. For Winona Lake garden weddings and Lake Wawasee lakefront events, the rustic-elegant aesthetic matches the venue.
